Banana Muffins

I had some bananas starting to brown on me. I have learned that brown spots mean more natural sugar :) Time to bake! I found a recipe on allrecipes.com, but I altered it quite a bit. Here is what I did:
Mix these ingredients in a bowl and set aside:
1 1/2 c wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
(optional)
1/2 tsp cinnamon
1/2 tsp nutmeg

With a mixer:
mash up 3 bananas
1/4 c white sugar
1/2 c brown sugar
1 egg
1/4 c pumpkin puree (1/3 c if you want more pumpkin flavor)

Streusel
1 Tbl butter
2 Tbl wheat flour
1/2 tsp cinnamon

Mix in the dry ingredients. Pour mix into your cupcake pan (about 2/3 full for each). Top the muffin mix with streusel and bake at 375 for about 19 minutes.

These are really moist! They aren't all sugared up (even though I added chocolate chips to the hubby's), but they are still really good lol I have them in a tupperware thingy on my fridge for a quick breakfast or snack.


In the beginning, there was high cholesterol...

Seriously. You think I kid. But I'm serious. Dead serious. I actually decided to start this blog quite awhile ago, but it has remained blank since about July. Why did I decide to start posting? Because I just had a physical. That was....enlightening? Here is my list:

My weight will not be disclosed. Just figure its not 115.
I need to have my tonsils removed
Hypothyroid...stuff
High cholesterol
A vicious looking mole
UTI
Dehydrated

Now I know what you're thinking - you're jealous. You wish you were as healthy as I am, but I wan't born this way. I worked hard for these numbers! I don't exercise regularly, I eat the suggested 1-2 bowls of ice cream each night, use lots of butter and snack all day and drink an abnormal amount of Diet Coke. Perfect recipe for obesity and a heart attack!

(My serious face) I know it could be worse. I'm very fortunate that I am only 26...okay, 32 and I can change my health with exercise and dieting. But I have these things called kids, ages 35, 6 & 4. I have tried The Sneaky Chef book, but everything goes bad way to quickly before I use it so it seems like kind of a waste. The thought of "diet" foods usually disgusts me and my husband because...well...its disgusting. So I'm determined to come up with a plan and the hubby is on board since we're kind of in the same boat.

Here is my game plan:
I am getting the Bountiful Baskets and I intend to use every last thing in it, which means coming up with new, healthy recipes.
I will document the foods I make from scratch on here to keep me in check and make it more fun for me :)
I will go to the gym at least 4 times a week (especially since I'm paying for it)
I will (attempt) to limit my sugar treats to 1 per day. Hey! Don't knock it! Even Dr. Oz says you shouldn't deprive yourself of things you love.
